This is the best quick biscuit recipe out there. There’s no yeast and waiting and all of that with normal rolls and these are so delicious you’ll be making them to have with everything from my favorite oven fried chicken, freezer friendly white chicken chili, or just with some simple butter and jam.

I absolutely love homemade bread but sometimes waiting for yeast to do it’s thing is a bit inconvenient. This biscuit recipe is easy to through together so quickly it’s good for those days when you don’t have time.

Not just that but sometimes you feel more like the soft buttery flavor of a biscuit instead of a yeast roll you know what I mean?

My sister made the most amazing biscuits for Beautiful Creatures party and my mom made this super tasty fried chicken for part of our Chinese New Years feast (she dosed it in sweet and sour sauce) and I have been craving those two dishes like a crazy girl (minus the chicken sauce) and finally I got them to indulge me.

It turns out the biscuits are super fast and easy to make so took a few pictures while she whipped up a batch.

FAQs

What is the secret to the perfect biscuit? ›

Handle the dough as little as possible. Every time you touch, knead and fold, you are developing gluten. The more developed the gluten, the tougher the biscuit. Our recipe asks you to the dough 10 times; this will create a cohesive dough with visible pieces of butter and sprinkles of flour.

What makes homemade biscuits taste better? ›

Buttermilk adds a tangy flavor to the biscuits and makes them slightly more tender. Butter: We use salted European butter in this recipe. It will work with unsalted or salted butter. I like the extra saltiness of salted butter, but you can reduce the salt to 3/4 teaspoon if you prefer.

Do you use baking soda or baking powder in biscuits? ›

The Dry Ingredients

The biscuit mix itself is a simple combination of all-purpose flour, sugar, salt, baking powder, and baking soda.

What not to do when making biscuits? ›

5 Mistakes You're Making With Your Biscuits
  1. Mistake #1: Your butter is too warm.
  2. Mistake #2: You're using an inferior flour.
  3. Mistake #3: You use an appliance to mix your batter.
  4. Mistake #4: You don't fold the dough enough.
  5. Mistake #5: You twist your biscuit cutter.

What kind of flour makes the best biscuits? ›

White wheat in general is around 9-12% protein, while the hard reds are 11-15%. As far as brands of flour, White Lily “all-purpose” flour has been my go-to for biscuit making. It's a soft red winter wheat, and the low protein and low gluten content keep biscuits from becoming too dense.

Should you chill biscuit dough before baking? ›

But if you chill your pan of biscuits in the fridge before baking, not only will the gluten relax (yielding more tender biscuits), the butter will harden up. And the longer it takes the butter to melt as the biscuits bake, the more chance they have to rise high and maintain their shape. So, chill... and chill.

Is butter or crisco better in biscuits? ›

The butter version rises the highest — look at those flaky layers! The shortening biscuit is slightly shorter and a bit drier, too. Butter contains a bit of water, which helps create steam and gives baked goods a boost.

What are the secrets to fluffy biscuits? ›

For soft and fluffy biscuits, blend the liquid and dry ingredients just until the dough "resembles cottage cheese," Sonoskus says. This stops you from activating too much gluten in the flour and ending up with a tougher biscuit that doesn't rise as high. But even if you mix too much, don't worry.

Is it better to use milk or buttermilk in biscuits? ›

Buttermilk adds a nice tang to the biscuit flavor and helps them rise better.

How can I get my biscuits to rise higher? ›

Keep the oven hot.

When baking buttery treats like biscuits, the key is to bake them at a temperature where the water in the butter turns quickly to steam. This steam is a big part of how the biscuits achieve their height, as it evaporates up and out.

What does cream of tartar do in biscuits? ›

As the biscuits rise, the carbon dioxide gas expands, creating pressure on the dough. This pressure can cause the dough to collapse without proper support. Cream of Tartar helps stabilize the dough structure, ensuring the biscuits maintain their shape and rise uniformly.

Should homemade biscuits touch when baking? ›

Whether using a cast iron skillet or a baking tray, lay your biscuits so they are touching sides and all connected. This helps them rise higher, as they provide support for one another as they bake – kind of like a doughy shoulder to lean on!

Why are biscuits so unhealthy? ›

Can biscuits be healthy to eat? Biscuits are not necessarily healthy as they contain a lot of saturated fat due to a large amount of butter used in making biscuits. The amount of saturated fat in a typically-sized biscuit usually composes 30-50% of the recommended daily value of saturated fat.

Do you have to let biscuit dough rest? ›

Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes. Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured biscuit cutter (or even a glass, though its duller edge may result in slightly less tall biscuits).

Why is it so hard to make biscuits? ›

Overworking (or Underworking) the Dough

The biscuits will be hard and tough if you stir the dough too much. They will have a floury, uneven texture if you don't mix enough. Our Test Kitchen cracked the code: Stir the dough 15 times for the perfect consistency and texture.

What are the two most important steps in biscuit making? ›

The two keys to success in making the best biscuits are handling the dough as little as possible as well as using very cold solid fat (butter, shortening, or lard) and cold liquid. When the biscuits hit the oven, the cold liquid will start to evaporate creating steam which will help our biscuits get very tall.

What is the most important step in biscuit making? ›

Mixing. The multi-stage mixing method is preferred for its ability to produce consistent doughs which are not fully developed. Blending all dry ingredients to rub or cut the shortening into the flour until fat is fully distributed and pea-sized lumps are visible.

What does adding an egg to biscuits do? ›

For super light, crumbly biscuits try grating or pushing the yolks of hard-boiled eggs through a sieve into the biscuit dough. This increases the fat content and slows down the development of gluten. Cookie recipes on the other hand are more likely to contain eggs. Adding moisture as well as binding the mixture.
