GLUTEN-FREE RAVIOLI

Gluten-free ravioli is a labor of love. Any pasta made from scratch is. I love experimenting with the different filling options and adding different sauces.

If you are short on time, here's a handy article on the best gluten-free pasta brands available now, and why we recommend them. I must, however, say I do prefer fresh, but the brands recommended are a viable alternative for those busy weeknights.

WHY YOU’RE GOING TO LOVE THIS GLUTEN-FREE RAVIOLI

No special equipment needed - If you have a ravioli stamp maker, that's great, but you can also use a fork. I do, however, suggest you invest in one if you intend to do this regularly.

Change it up - You can change the fillings and sauce, so you have a different meal each month or week if you have time. Some filling options are spinach with ricotta, butternut squash, or cheese and mushroom.

INGREDIENTS IN GLUTEN-FREE RAVIOLI

PASTA INGREDIENTS:

Flour - 2 ½ cups gluten-free flour blend, plus extra for dusting. I used Bob's Red Mill Gluten Free 1-to-1 Baking Flour.

Eggs - Room temperature whole eggs and 2 egg yolks.

Salt - ½ teaspoon of salt.

Oil - I've used olive oil.

Water - ⅓ cup warm water plus more, as necessary.

PASTA FILLING:

Cheese - Ricotta cheese, mozzarella cheese, and grated parmesan cheese.

Egg - Room temperature large egg.

Seasoning - garlic, dried oregano, dried parsley, ground black pepper and salt.

Water - Water to boil with ¼ tsp salt.

EQUIPMENT NEEDED FOR THIS GLUTEN-FREE RAVIOLI

Mixing bowls - These Pyrex mixing bowls come in handy.

Ravioli stamp - Use a ravioli stamp. This ravioli stamp set is useful, but if you don't have one, you can use a fork. If you intend on making more gluten-free pasta you may consider adding this pasta maker to your list. It helps you to get the right thickness, but you can also use a rolling pin.

HOW TO MAKE GLUTEN-FREE RAVIOLI

MAKE THE PASTA:

  1. Mix all the eggs and egg yolks, and water in a medium mixing bowl. Mix well and set aside.
  2. In a large mixing bowl, mix gluten-free flour, olive oil, and salt. Make a hole in the flour mixture and add the egg mixture to it.
  3. Stir them and if all is mixing well, move the dough on the floured flat surface and knead it using your hand for 10 -15 minutes. If the gluten-free ravioli dough feels stiff, add more water until pliable. Form into a ball and cover with plastic wraps. Let it rest for 30 minutes.

MAKE THE FILLING:

1. Mix all the ingredients in a large mixing bowl and set aside until the dough is ready.

HOW TO ASSEMBLE:

  1. After 30 minutes, divide the dough into 4 parts. Start with one part of the dough. Wrap the three remaining dough parts gently in plastic to prevent them from drying.
  2. Put 1 part of the dough on the generous floured flat surface, sprinkle with more flour and roll it just up and down, then rotate it. Fold both sides of the dough to the middle, flip, then roll it again up and down until very thin. The thinner, the better (around 1-2mm). Do the same for the remaining dough.
  3. Take 1 teaspoon of the filling. Give space for each filling around 1 inch. Brush the edges with water and cover the cheese filling with other dough. Be careful, do not tear the dough.
  4. Press the part around the filling (all the edges) using your palm then press by ravioli stamp. Or you can cut it with a very sharp knife and close the edges using a fork.
  5. In a pan with boiled water, add ¼ tsp salt then place the ravioli. Boil for about 8 minutes or until the ravioli has begun to swell in size and the dough is fork tender and the filling is cooked. Remove from the water with a slotted spoon or strainer.
  6. Serve with garlic oil, salt, ground pepper, and chopped parsley.

BONUS TIPS FOR THE BEST GF RAVIOLI

Roll the dough correctly - If you have a rolling pin or pasta maker use it to make the gf pasta ravioli the correct thickness which is ⅛ inch.

Don't overcook it - If you overcook the ravioli, it will come out tough.

Dough pliable - Make sure the dough is pliable enough, if not add additional water.

Filling:

  • 2 cups ricotta cheese
  • ½ cup mozzarella cheese
  • ¼ cup grated parmesan cheese
