You'll get a little bit of protein from some shredded cheesy goodness, crispy organic bacon and some quality, pastured or organic eggs. But the protein-rich star ingredient is WHOLE MILK cottage cheese.
Yes, you read that right, whole milk.

It's almost impossible to find quality, authentic, cultured, WHOLE MILK cottage cheese these days. Pretty much everything on the market is fat free, low fat and lacking inlive cultures.
I'm so thrilled about this because it's from a family owned- and- run company that I have supported for many years. They have been making TRUE cultured dairy products with live probiotic cultures since 1960 {way before it became popular and people started to learn how important probiotics are for gut-health}.
But back to this stellar casserole!
I love adding whole milk cottage cheese to this cauliflower breakfast casserole for the creamy flavor, but most importantly for the protein boost!
One cup of cottage cheese goes into this casserole supplying 28 grams of protein!
While this meal was createdto be served for breakfast, it would also make adelicious brunch, lunch or even dinner served alongside a salad.

Healthy Cauliflower Breakfast Casserole

Change up your breakfast routine with this delicious, healthy Cauliflower Breakfast Casserole. It's grain free, low carb, easy to make, protein packed and full of nourishing ingredients.
Ingredients
- 2 small heads of cauliflower or 4 cups cauliflower "rice"
- 2 tablespoon grass-fed butter or ghee, melted
- 1 cup Nancy's organic cultured whole milk cottage cheese
- 1 ¼ cup shredded organic cheddar cheese, divided
- 1 cup pre-cooked or steamed chopped kale
- 6-8 pre-cooked strips of crispy organic bacon, crumbled
- 1 teaspoon fresh thyme leaves
- 1 teaspoon garlic powder
- 1 teaspoon Celtic sea salt (<-- salt)
- Juice and zest of ½ lemon
- 4 pastured or organic eggs, gently whisked
- ¼ cup grated parmesan cheese, plus more for garnish
- Freshly chopped Italian parsley or cilantro, for garnish - optional
Instructions
- Grease a 9" round piedish or a 1 ½ quart casserole dish and set aside. Preheat the oven to 350 degrees F.
- Cut the heads of cauliflower into florets and add to a food processor or a high-powered blender that has a chopping option. Pulse just until cauliflower has turned into a "rice" consistency, do not puree the cauliflower. You might have to do this in a few batches depending on the size of your food processor or blender.
- Add the cauliflower "rice" to a large mixing bowl. Add the melted healthy fat of choiceand give it a good stir. Next add the cottage cheese, 1 cup cheddar cheese, cooked kale, crumbledbacon, thyme, garlic powder, sea salt, lemon juice and zest, stir to combine. Add the whisked eggs and stir to combine.Pour the mixture into the greased dish and sprinkle the reserved ¼ cup of cheddar cheese over the top followed by the grated parmesan.
- Bake for 40-50 minutes or until the top islight golden brown and the egg mixture has cooked through.
- Serve immediately garnished with optional freshly chopped Italian parsley or cilantro and/or an extra sprinkling of grated parmesan cheese.
