Hey there! I’m excited to share this low carb white gravy recipe because it contains ZERO thickening powders like xanthan gum or glucomannan.

It’s not that I don’t use those ingredients in some of my recipes but I don’t really dig them in gravy.

It’s too easy to add too much and end up with gravy jello…or as my teen calls it, “gravy shots”.

This recipe tastes like white country gravy…nice and rich in flavor with a thick, creamy texture.

🥘Ingredients:

  • 2 tsp butter

You can use another type of fat if you like but I believe it’s better with butter.

  • 1 cup unsweetened cashew milk – Or heavy cream.

Cashew milk is thicker than almond milk and the nutty flavor is a nice compliment to the gravy.

Heavy cream will make a thicker gravy…I don’t usually use cream cheese and heavy cream together because it upsets my belly.

But, if you are cool with that much dairy at once, go for it because it tastes fantastic.

  • 8 oz cream cheese

Cut cold cream cheese into cubes to speed up the melting process.

  • ½ tsp sage

Use whatever spices you like..thyme is excellent in this gravy too.

Start with the recommended amount of pepper and add more into the gravy while cooking or let everyone add more at the table.

Taste everything you make to ensure you get enough spice.

  • ½ tsp chicken bouillon *or whatever flavor you choose. Optional but good for flavor in place for salt.
  • 4 oz sausage * OPTIONAL -bulk style. You can make the gravy without the sausage.

👨‍🍳How to make the White Gravy:

  • Place butter in a medium sauce pan and turn heat to medium/high to melt.

Add the sausage and brown if using. If not, just add the butter and continue.

  • Add the rest of the gravy ingredients and turn to medium low.

Do not boil, just bring to a gentle simmer so that the cream cheese melts and the gravy thickens.

Whisk occasionally to keep it from burning on the bottom of the pan.

  • Serve or store in the fridge for 3-4 days.

This sauce is easy to reheat in the microwave or on the stove but don’t let it boil.

Can I freeze this gravy?

No. If you won’t be able to finish it within a few days, cut the recipe in half.

Can I make this recipe vegan?
